Morassa Polo Recipe

Morrasa Polo (barberry with rice) is a famous Persian meal.
Recipe for 4 servings:

Ingredients

-basmati or long grain rice, 500 grams
-cooking oil
-butter, 2 spoons
-barberries (dried), 80 grams
-almonds, 50 grams
-pistachios, 50 grams
-sugar, 2 spoons
-saffron, 1/2 teaspoon
-salt

Cooking Method

  1.  Soak some rice in salted warm water for 1-2 hours.
  2.  Soak saffron and barberry in water, separately for 30 minutes, .
  3.  Cook the rice in boiling water containing one spoon salt, for about 5-8 minutes until rice slighty sonftens.
  4.  Drain off the water from rice and wash it with slighty warm water.
  5.  Pour a little oil in the bottom of a non-stick pot, pour the rice in the pot, close the lid completely and let the rice to be cooked by steam on low flame for about 30 minutes.
  6.  Meanwhile, drain off the water from barberry and wash it with water.
  7.  Fry the barberry in butter for about 3 minutes.
  8. Add soaked saffron and sugar to the barberry and mix them completely.
  9. Pour the rice in the platter and garnish it with barberry, saffron and some chopped pistachio and almond.
Enjoy eating Morassa Polo with cooked or roasted chicken.
