Recipe for 4 servings:
Ingredients
-basmati or long grain rice, 500 grams
-cooking oil
-butter, 2 spoons
-barberries (dried), 80 grams
-almonds, 50 grams
-pistachios, 50 grams
-sugar, 2 spoons
-saffron, 1/2 teaspoon
-salt
Cooking Method
- Soak some rice in salted warm water for 1-2 hours.
- Soak saffron and barberry in water, separately for 30 minutes, .
- Cook the rice in boiling water containing one spoon salt, for about 5-8 minutes until rice slighty sonftens.
- Drain off the water from rice and wash it with slighty warm water.
- Pour a little oil in the bottom of a non-stick pot, pour the rice in the pot, close the lid completely and let the rice to be cooked by steam on low flame for about 30 minutes.
- Meanwhile, drain off the water from barberry and wash it with water.
- Fry the barberry in butter for about 3 minutes.
- Add soaked saffron and sugar to the barberry and mix them completely.
- Pour the rice in the platter and garnish it with barberry, saffron and some chopped pistachio and almond.
